There are a thousand recipes for taco salad out there and I am not a huge fan so I have not tried many.  I do however, love my grandma’s taco salad!  It is fairly simple and makes a great “group” meal.  We have it nearly every time the whole family gets together.

1 lb ground beef

1/2 pkg taco seasoning

1/2 medium onion, chopped

1 medium onion, chopped

1 avocado, sliced or chopped

1 can kidney beans, drained and rinsed

1 1/2 cups sharp cheddar, shredded

1/2 cup salsa of your choice

1/2 of a 16 oz bag of tortilla chips

1/2 head of iceberg lettuce, sliced so it falls apart nicely in the bowl

1 cup french dressing of your choice

Brown and drain your ground beef and then return it to the pan.  Sprinkle and mix in the taco seasoning (use 1/2 the package but don’t worry, it does not have to be exact).  Keep on low heat to keep it warm while assembling the rest of the salad.  In a large bowl, add all of your ingredients (when adding the chips, I grab by the handfuls and sort of squish or crush it a little as I add it.  This way it breaks up the chips into smaller pieces).  Stir well and serve with salsa and sour cream.

This recipe serves 6 to 7 people as an only dish.  I imagine if it was served as a side dish or in a potluck setting, it would go further.

This is one of those dishes that I like to call Mormon Slop, I call it this because well it looks like something I put in my pigs trough for dinner. Most mormon dishes tend to be just this a whole bunch of ingredients thrown in a bowl and given a stupid name and served as dinner or a side salad which is not a salad at all but an excuse to dump crap into jello or pudding and call it something like cookie salad or pink stuff. Alright I am off my rant however from time to time I do resort to such atrocity and cave in, tonight I did it because it was mostly simple and I didn’t have the energy to think of making something edible and I wasn’t hungry….. I did however have a few spoon fulls.

Of course it wouldn’t be right if I didn’t change it a little bit here is what you need.

  • 1 pound ground beef
  • 8-12 ounces pasta
  • 1 small onion, chopped (about 1 cup)
  • garlic salt, cumin, crushed red pepper flakes, paprika
  • 1 (14 oz.) can diced tomatoes
  • 1 packet (4 tablespoons) taco seasoning
  • 3 ounces cream cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro (optional)
  • Salt and pepper

 

Brown you beef and onions.

Meanwhile in a large pot cook up your pasta I would choose to use whatever I have on hand that I dont use alot, I always buy some sort of funky pasta because I can get it on sale for almost nothing and think I am going to use it. Then I dont use it and it sits on the shelf until I am out of everything else.

Once your pasta is cooked and your meat is browned add a can of tomatoes I used petite diced, and a packed of taco seasoning mix it in really well, I then added in a little more cumin, garlic salt and crushed red pepper flakes for more flavor. ( oh and some paprika)Then ad the cream cheese, and sour cream to the noodles I also added about 1/2 cup of water  melt down the cheese and then add in your meat mixture give it a good stir and voila a big pot of taco pasta. I also added a bit of cilantro for more flavor.

If you like heat I would have added some jalapenos when I cooked up the meat and onions .

I topped mine with a bit of cheese. It was pretty good I wish I would of had some jalapenos to put n the dish but my kids would have thought it was to hot anyway.

It wasn’t my favorite dish but I would make it again in a pinch just to shake things up a bit.
